Recipe: Slow-cooker Sloppy Joes (Slimming World friendly)

Sloppy Joes are a favourite family meal in the US. They’re easy to make, cheap, delicious and a little bit messy – which means kids love them!
(For those who don’t know, a Sloppy Joe is a roll filled with mince cooked in a tomatoey-barbecuey sauce – in other words, delicious) 🙂

Recently, I got a bit of a craving for this food of my homeland and figured it would be a pretty easy dish to make Slimming World friendly.

After a bit of thought, I decided to make it simple on myself, and used the slow-cooker pulled pork recipe from the Slimming World website (you can find it here) as the basis for the dish.

All I did to change it was swap out the pork joint for a pack of mince and I added a bit of BBQ spice mix to make it more barbecuey.

Anyway, I ended up with a dish that was completely free, except for the roll, which was a Healthy Extra. I thought it was good and both Daddy-man and Pumpkin agreed.

Making Sloppy Joes is easy in the slow cooker. Simply take the ingredients…

Plop them all in the slow cooker…

Use the mixture as you wish. I think it’s best in a roll or bread. But you could also serve it on mash or in a jacket potato, if you want to keep the meal syn-free.

Ingredients

  • 1 pack extra lean mince
  • 5 tbsp Worcestershire sauce
  • 1 tsp mustard powder
  • 500g passata
  • 3 tbsp balsamic vinegar
  • 2 cloves of garlic, crushed (I use frozen garlic cubes)
  • 3 tbsp sweetener
  • 1 tbsp barbecue spice mix
  • Freshly ground black pepper

Method

  1. Add all ingredients to slow cooker, stir and cover.
  2. Turn slow cooker on to low and leave to cook for 3-4 hours.
  3. Serve on a roll, on top of a jacket potato or on mash.
